When you cook meat, getting it to the right temperature affects

• How it looks

• Taste

• Texture (tender, stringy)

• How safe it is

[note, even if you do vegetarian or vegan, this is good stuff to know]

One type of meat needs a higher temp. What is it, and WHY!!! https://www.cidrap.umn.edu/news-perspective/2006/04/usda-165-degrees-magic-number-safe-poultry might help. Also, remember the website uses F (180) while we use C (82). Know both.
