Holding Temperature
Holding Temperature is the range of temperatures that make it really hard
for pathogens (bacteria, fungi, protists) to grow.
There are 3 types of holding: Freezing, refrigeration, and hot holding.
Can you place them on the chart?
**You wouldn’t really hold food at 200, but it’s safe. It would get dry and nasty.
Hotter than 200, and some things will catch fire. That is not safe :)
